Mom’s Cheese Ball

A Cheeseball Perfect for Holiday Paries

By Dr. Katy Heyning, Provost and Vice President for Academic Affairs

Ingredients:

  • 2 8 oz. pkg. cream cheese
  • 1 8 oz. pkg sharp cheese (Cracker Barrel is best)
  • 1 tbl. green pepper chopped fine
  • 1 tbl. onion chopped fine
  • 1 tbl. pimento chopped fine
  • 2 tsp. Worcestershire sauce
  • 1 tsp. lemon juice
  • dash salt
  • cayenne pepper
  • garlic powder
  • chopped nuts (pecans, walnuts or almonds work well)

Instructions:

  1. Shred the hard cheese (sharp cheddar).
  2. Mix all ingredients together. Add garlic powder and cayenne pepper to taste.
  3. Form into one or two balls, and roll in chopped nuts.
  4. Wrap in plastic wrap and store in fridge for 24 hours.
  5. Serve with crackers (really good with Triscuits).
  6. For holidays you can make into three smaller small balls and roll one in paprika, one in dried parsley and one in nuts and serve together for a little holiday “flair.” These also freeze well, so you can make two and freeze one for later.

Story:

My mom was famous for her cheese balls. They were at every holiday, and for many family gatherings and cocktail parties.

Kugels are a mainstay of festive meals in Ashkenazi Jewish homes, particularly on the Jewish Sabbath and other Jewish holidays. Some believe that eating kugel on the Jewish Sabbath brings special spiritual blessings. The first kugels were made from bread and flour and were savory rather than sweet. The addition of cottage cheese, raisins, and cinnamon made them a more custard like dessert which are more commonly known today.
